Spring! I told you it would come. Now, let’s face it, with COVID-19 knocking on everyone’s doors this month hasn’t come quite as expected. Most of us are staying in, quite a few of us are going a bit mad and some are trying to ignore an irresistible air of panic that seems to be hanging around quite thickly. However, it is also a time of opportunity. A little more time for cooking experiments perhaps, a renewed motivation to support local businesses or reach out to neighbours in need.
There’s a certain rebirth in that’s in season in April too. This month we have lettuce and dover sole pulling us closer to the warmer weather. It’s when salads start to change their nature – fewer hearty kale varieties are on offer and more herby delicate options begin to appear. Nonetheless it’s reassuring to know that for the days when April Showers blight us or coronavirus overwhelms us there are still comforting foods in season*, whether it’s the ingredients for a rhubarb crumble or cauliflower cheese.
